Ingredients:
2 cups of dates, soaked overnight
1 cup of walnuts, soaked overnight
2 cups of cashew or macadamia nuts soaked overnight
1 (2) cup of sundried apricots, soaked
1/2 cup of water
Fresh lemon juice (1 lemon)
1 tbsp of psyllium husk
Stevia, lucuma, or any sweetener of your choice - to taste
A pinch of Vanilla
Pomegranate (decoration, optional any fruit will do)
Directions:
Prepare the base in your food processor. Add the dates, walnuts and a hint of vanilla.
Now comes the whipped cream:
Blend till smooth the cashews, or macadamia nuts with the water, lemon juice, sweetener, adding a pinch of vanilla and a cup or 2 of soaked apricots.
The quantity depends on how fruity you want your cake. This is not mathematics, you don't have to worry if you have some more cream when you finished your cake. You can simply eat it with a spoon. It's raw ;-)

You can prepare this without psyllium husk just don’t add water.
Adding some water will help your blender making your cream really smooth, then you simply adjust with psyllium husk how dense you want things to become.
I tell you to soak the walnuts, because it's healthier, but to be honest, I tend not to soak it for my tart bases, because I like it more dry.
Now prepare your base with your hands, pour over the cream, decorate, place it in the freezer for a couple of hours and you're done.
